A large mushroom known for its distinctive and appealing aroma.

CHARACTERISTICS
This is a large, funnel-shaped mushroom.
While it commonly grows on walnut wood, it also thrives on both softwoods and hardwoods.
Mushroom field guides often note that it becomes tough and leathery as it matures, but our cultivation experience has shown that with proper humidity control, it retains a soft and ideal texture. The base of the stem is usually too tough and should be discarded.
GASTRONOMY
The flesh is white and dense, with a unique aroma reminiscent of flour and honey.
A quick sauté leaves the texture tender and the flavor mild and pleasant, but when roasted and caramelized, it develops a flavor similar to roasted pork fat.
